Everybody remembers their 1st "real job"...

Eager to make some money I started washing dishes, then busing tables, then waiting tables (should have stopped there because nothing is better than tip :) - then short-order cooking and a little managing before I moved on with more "real education" than I had gathered in 13 years of formal education. 

It was 1975 and I started work on my 16th birthday.

Speeds Koffee Shops - Battle Creek, Michigan.  I loved that job.

The business icon that built the company was "Speed" Eddinger - Richard W. "Speed" Eddinger, 90, of Battle Creek, died May 22, 2019

At the "Height" of his business Speed's Koffee Shops had a dozen locations in 3 cities and around 500 employees. His 15 managers worked 60 to 100 hours a week but made as much money as most attorneys in Battle Creek, Michigan. 

His waitresses and waiters made 4 times the minimum wage and we were a "tight-knit" group. We had company events together, holiday parties, lot's of married couples worked for Speed.

He had company "culture" 30 years before Amazon or Google. His "greasy spoon" restaurant made money. Because he understood a couple of things really well...

Location and Accessibility.

Speed placed every restaurant right across the street from a "drinking establishment" = a bar. How's that for serving a "hungry crowd"?

Every restaurant operated 24/7

The bars closed at 2 AM in Michigan. At 2:15...

7 days a week we were packed in the middle of the night when most all of the competition was closed. A crowd that was eager to have some food before they went home and went to bed in a factory town that had lots of 2nd and 3rd shift workers who slept in the day and worked at night.

The business lesson is simple, know your audience, find niches, give them what they want.
