Kohlrabi is a hardy, annual vegetable that is actually a cultivar of cabbage and was specifically bred to grow in harsh conditions.
It tastes a little like broccoli stem, very palatable and can be eaten raw or cooked, and you can use the root as well as the leaves, because they both have significant amounts of nutrients. Copper, potassium, manganese, iron, calcium as well as vitamins. C, B-complex, vitamin A and vitamin K. Kohlrabi is also high in dietary fibre and numerous antioxidant compounds and various carotenes.

Because Kohlrabi is a rich source of carotenes, including beta-carotene, which acts as an antioxidant in the body, particularly in the eyes. Vitamin A can help to prevent macular degeneration and slow down or eliminate the development of Cataract’s.
So adding this vegetable to your regular eating plan may do a whole lot more than just add flavour and texture to your meal!
